I have two awesome little kiddos – 15 months and 3 months on the 22nd of September! We are a happy little family living in Seattle, WA (Ballard Neighborhood). I am a stay-at-home Momma who likes to cook and is just learning how to cook vegan as well as gluten-free (I have been cooking gluten-free for 4 years). We go to Mars Hill Church in Seattle and love the community there! My husband recently committed to going vegan which is super exciting and I am looking forward to the challenge of keeping him full!
My food/allergy/diet story:
Early in life I had migraine headaches and they thought it might be brain tumor or something of the like. It wasn’t and I went undiagnosed until I was 20. Around age 14 it was suggested to me to try a vegetarian diet to see if that helped me feel better. It did and I stayed vegetarian (with fish) until about age 20. At 20 I was diagnosed, after having severe intestinal distress, with Celiac’s. Thinking I HAD to eat meat I switched back to a meat centered diet heavy on the fresh fruits and veggies. I have avoided all carbs for about 4 years now and am just learning to incorporated substitutes that are actually tasty! Now we are going on a vegan/gluten-free diet and I am supper excited because I feel better already!
