In my quest to get meals organized I have naturally started with breakfast. Here are our 7 breakfast meals we will be rotating through until further notice:

Monday’s: Gluten Free Quick Oats (Bob’s Red Mill) with nuts (I like almonds) or dried fruit (raisons, craisons, apples)

Tuesday’s: Vanilla Soy Yogurt (Whole Soy & Co.) with Granola (Udi’s Au Naturel Gluten Free Granola) and 1/2 an Apple

Wednesday’s: Mighty Tasty Gluten Free Hot Cereal (Bob’s Red Mill) and 1/2 a Banana

Thursday’s: Eggs (we eat organic brown eggs – not vegan but we like eggs and fish still) on Trader Joe’s Gluten Free Rice Bread and bowl of homemade applesauce (I canned a bunch this last fall from Yakima apples!)

Friday’s: Peanut Butter and Jelly on Trader Joe’s Rice Bread or Cereal Baggies if we are going to Mt. Bachelor to ski with the kids. We like Gorilla Munch bought in large bags from Amazon or Nature’s Path Organic Corn Flakes also bought in bulk bags from Amazon. A banana for the road or home as well!

Saturday’s: Pancakes ( Pamela’s Products) and Applesauce (more of the homemade kind)

Sunday’s: Cereal, Milk (we use Rice, Soy and Almond from Trader Joe’s) and a Banana before Church.

I don’t think I left anything out. I want to try to make Muesli but haven’t gotten to a Gluten Free recipe I am excited about yet. Something else to add in later – maybe to replace Sunday morning’s meal

For breakfast today we made Gluten Free and Vegan Pancakes! I have tried mixes before and have never enjoyed the product but this one is actually very tasty. Trader Joe’s Gluten Free Pancake and Waffle Mix with Egg Replacer or try using applesauce. IF you are eating eggs then using eggs will make your pancakes more light and fluffy. I served the pancakes with hot maple syrup and a bowl of applesauce and everyone liked it a lot. Quote from my husband “These pancakes are better than the gluten filled kind!” He is normally quite difficult to please!

Also – I haven’t tried making it yet but there is a coffee cake recipe on the side of the pancake mix and it looks scrumptious – so we’ll be trying that soon!

Last Tuesday I decided that I was tired of gluten-free rolled oats and needed a change of pace. So I decided that we needed to try something new. Corn Grits? It doesn’t sound great but they are very delicious. You can serve them with fresh raw honey(or Agave Juice) and rice milk or soy milk for extra tastyness. You could add regular milk if you are not vegan.

I recommend Bob’s Red Mill Corn Grits which can also be used to make polenta (I haven’t tried it yet but it’s on my list!). I served a half of Banana in each bowl to add a serving of fruit in the morning. Nuts could also be a good option but I’m not a huge fan of nuts in the early morning. I should say, to be fair, that my husband does not care for this meal. He grew up eating corn grits and now won’t eat them anymore. He doesn’t have to eat gluten-free so he had Cheerios instead.

Breakfast 9/18/2009:

We had our first Gluten-Free/Vegan breakfast this morning! I went to Manna Mills in Mountlake Terrace yesterday to buy bulk Bob’s Red Mill GF Oats. I was able to purchase them for $2.99/lb which I was pretty happy with considering how expensive GF alternatives are ! Looking at the Bob’s Red Mill website I can actually purchase them cheaper but then I have to pay for shipping – if you get them in a case though you can get a %10 discount!

We have used Agave Juice before as a natural sweetener and I really like how it tastes, we do get the light kind to reduce the sugar content even further. Peach season is here right now and I picked up a beautiful flat of peaches at Costco yesterday (bad me for not supporting my local market last weekend). Super delicious anyway.

So we had big bowls of GF Oats, Rice Milk on top with a little Agave juice and some sliced peaches. It was so refreshing! We have a house guest staying with us right now and he seemed very pleased with breakfast as well! Tonight I am going to make Black Bean and Quinoa Chili for dinner. Off to the local market for me today!
